Insanely Yummy Banana Bread Muffins (Paleo + Gluten Free)

I’ve been sooo egggcited to drop this amazing gluten free + paleo banana bread muffin recipe to you this Easter. So whoop, here it is… (and it gets ALL my family’s approval, even the super fussy ones that usually turn their noses up at my healthy version recipes)


Ingredients


  • 3 medium sized heavily ripened bananas

  • 2.5 cups Almond Flour

  • 3 Tablespoons of Coconut Oil (for a buttery burst of flavour I added a fourth spoon of butter)

  • 1/4 Cup Honey/coconut sugar

  • 2 Tsp vanilla

  • 1tsp baking powder

  • 1tsp bi carb

  • 1tsp rock salt


  • 1 Tablespoon of organic vanilla yogurt (optional) 

  • 1 cup chocolate chips that suit your dietary requirements


Instructions


  • Preheat your oven to 220degrees Celsius

  • If you have almond meal rather than flour, whizz in blender for 1min to refine to flour texture

  • Melt your coconut oil/butter gently in a pan

  • In a bowl smash your bananas, add melted coconut oil and sugar or honey, vanilla essence and optional yogurt

  • Fold into your mixture all remaining dry ingredients

  • Place in all your mixture into your baking tray of patty cases and put in oven for 20 minutes or when the muffins are golden brown on top.

  • Serve cool and enjoy !!
