With the chillier months setting in here in the land of Oz, we have all the delights of runny noses, coughs and colds on the horizon too.


Starve the colds and warm your soul, with this gut amazing broth. Bone broth is an ancient cooking practice from cooking meat and chicken plus carcas typically for over 8-48hrs . In comparison to old time cooking practices, when factoring today’s disease rates, our modern way of eating has got a lot to answer for.


When I first learned this recipe, it was so easy that at the time, even though I couldn’t cook very well at all (true story), it would literally last me for days on a student shoe strong budget and tasted bloody delicious (mind the French).

Not only does your bone broth release essential micronutrients, it also makes it easier to absorb essential micronutrients such as magnesium, calcium phosphorus, sulphuric and phosphorus, vitamin D, potassium, zinc, manganese, copper, boron, iron, as well as vitamin A, K, C, & B. For example, hyaline cartilage AKA articular cartilage is composed of type II cartilage which is smooth in consistency and transparent. Its' role is to coat the end of the bones and therefore reduces friction in the joints. Fibrocartilage again is composed of type I & II cartilliage acts as a cushioning to our joints As it happens, bone broth has high levels of collegen and therefore helps to nourish your joints and keeps them healthy.

When it comes to our skin, many of us want to age youthfully yet our nails become more brittle and skin begins to become harder to maintain. Dry lifeless hair, brittle nails and visibly aging skin, can be a result of lack of nutrients in our eating plan. As cliche as it sounds, beauty really is, skin deep. The body uses vitamins, minerals, and compounds such as collagen to keep our hair, skin, and nails looking their best. Here comes in the role of gelatin. Gelatin is essentially cooked collagen, naturally found in high amounts in bone broth and is primarily made up of the amino acids glycine and proline. When you consume Gelatin, it helps to seal any holes in the gut and lines the gut, protecting it against further injury. Gelatin also helps to reduce leaky gut and therefore inflammation in your body. An inflamed leaky gut creates holes in the gut which allow partially digested foods to enter. Good job that Gelatin has been shown to reduce pro inflammatory markers. If consumed foods are not broken down effectively in our body, bacteria will feed off it and it's nasty by product is unwanted gas causing inflammation which leads to heartburn symptoms.

Interestingly, gelatin acts as a mucas layer and helps to build new tissue in the villi, which are the small projections throughout the intestines. The villi increase the surface area of the gut so that nutrients that come on board, can be absorbed better.

There's something to be said about the way our cooking used to be, back in the day. Our grandmas and grandfathers and even further back in our ancestry probably cooked this in their day very often, especially during war times and during the great depression when there were real food shortages.
